Avocado and Tomato Carpaccio

This simple but elegant presentation of avocado and tomato carpaccio highlights these vegetables perfectly. It is so fresh and a great combination of flavors and it only takes a minute to put together.


Ingredients:


1 large ripe avocado

2 ripe tomatoes

Crumbled Feta cheese

Bunch of fresh arugula

Scallions

Lemon juice

Extra virgin olive oil

Salt

Fresh cracked pepper


Preparation:


Slice your tomatoes as thinly as possible.


Cut the avocado in half, remove the pit. Scoop each half with a spoon and place in your cutting board, then slice very thinly.


Chop scallions and crumble Feta cheese


Assemble the tomatoes into a spiral form, proceed to do the same with the avocado slices. Place the arugula in the middle. Top with the scallions and crumbled Feta cheese.


Drizzle with some olive oil, a bit of lemon juice, and season with salt and pepper.
