Baked Spicy Chicken Wings

I love spicy chicken wings, however I leave the fried version for the days I go out to a bar. This recipe is for baked wings and the dressing is made with yogurt instead of mayonnaise or sour cream. This way you can enjoy this snack with a bit less guilt and they are equally delicious!


Ingredients:


12 chicken wings


For the sauce:

1/2 cup of hot sauce

1 tablespoons of honey

3 tablespoons of butter

**If you prefer to skip this step, you can use wing sauce from the store, I like Frank´s Wing Sauce or Buffalo Wild Wings Sauce


For the marinade:

Salt

Pepper

1 teaspoon of olive oil

1/2 teaspoon of garlic powder

1 teaspoon of paprika

Chili flakes or cayenne pepper

1/2 lime juice


For the homemade dressing:

1 cup of Greek yogurt

Dried onion powder

1 clove of garlic or 1/2 teaspoon of garlic powder

Dried parsley

Dried chives

Salt and fresh cracked pepper

Fresh Fennel (can use dried)


Preparation:


Start by preparing your marinade. Add the garlic and salt to the mortar and start crushing, then add all other dried ingredients and finally add the oil and lime juice.


Clean your chicken wings and add to a bowl. Add the marinade and mix well until all wings are well coated. Let them sit in the fridge for about 2 hours (even better if you do it the night before).


Preheat your oven at 200 C


Place the wings in a wire rack and cook for about 20 minutes, then turn them around and continue baking for an additional 20/25 minutes or until browned and crispy.


In the meantime prepare your wing dressing. In a bowl add the Greek yogurt and all the dried ingredients. Mix well and taste for flavor. Cover and place in the refrigerator until ready to eat with your spicy wings.


In a small pan add the hot sauce and honey, mix together. Simmer and add the butter. Leave until the sauce is slightly reduced.


Remove the wings from the oven, quickly add to a bowl and toss with the hot sauce. Make sure all wings are well coated.


Serve with the homemade dressing and a cold beer!
