Peanut Sauce

First time I tried this sauce I absolutely fell in love with it, it is so delicious that I had to learn how to make it. Mine is not the same as the recipe I learned while traveling in Ubud, Indonesia. Of course, nothing beats the real thing, but not all the ingredients that go into this elaborate sauce are available in Barcelona and sometimes we do not have the time to blend our peanuts in the pestle and mortar. I must say, mine is pretty awesome and the bonus it that it is really easy to make!



Ingredients:


4 tablespoons of good quality Peanut Butter (crunchy)

3 tablespoons of Soy Sauce

1 tablespoon of Sweet Chilli Sauce or 1 pinch of Red Chilli flakes

2 teaspoons of fresh Ginger

Small bunch of fresh Coriander

1 teaspoon of brown sugar

1/2 cup water

Juice of one Lime



Preparation:


Add all the ingredients to the electric mixer. Add half of the water and blend, keep adding remaining water until you have created a paste and the desired consistency. Season to taste, I personally always like to add more lime to give it that fresh taste!


This recipe is great for serving with chicken satay. Satay or "sate" is the Indonesian dish of skewered and grilled meat served with sauce.
