I love this dish, the chicken comes out so tasty and falls of the bones.
This is an Italian dish and cacciatore means "hunter", so basically this dish is hunter´s style chicken which is roughly prepared with onions, bell peppers and tomatoes.
As every dish, there are many variations even in Italy depending on the region. Here I share my version of this melt in your mouth hunter style chicken dish.
Ingredients:
1 whole chicken (1.5kg -3.3 pound)
1 medium yellow onion
1 medium red bell pepper
3 cloves of garlic
64 grams of plain flour (½ cup)
75 ml of white wine (1/3 cup) - optional
1-2 sprigs of fresh thyme
1 teaspoon of dried oregano
1 can of diced tomatoes
1 cup of chicken broth
Olive oil
Salt and Pepper
Parsley - for garnish
Preparation:
Start by cutting your chicken into pieces and remove all excess fat. Leave the chicken on the bones for taste.
Pat dry the chicken with a paper towel and season with salt and fresh cracked pepper.
Measure your flour and lightly season with pepper and salt, lightly coat each chicken piece with the flour removing excess off.
Heat a large pan with olive oil and include one clove of garlic (cut in half), once the oil is hot start adding the chicken pieces. Work in batches if necessary. Cook until the chicken has browned (around 5 minutes). Remove from the pan and transfer to a plate with a paper towel to absorb all excess fat.
While the chicken is cooking roughly chop the onion, bell pepper and 2 cloves of garlic.
In a large pot heat some olive oil and add the onion and thyme, cook until translucent. Add the garlic, oregano, and bell peppers. If using wine, add the wine. Cook for a few minutes and add the can of diced tomatoes and chicken broth.
Cover the pot and let it simmer for about 25-30 minutes.
Transfer to a serving dish and sprinkle some fresh parsley.
