Who doesn´t love the smell of warm apples and cinnamon? This cake is really delicious with chunks of sweet apples mixed with spices and walnuts in a perfectly moist cake.
This recipe came from my aunt Marilyn who loved to bake, it was her specialty.
Ingredients:
4 cups of red apples, about 3 medium apples (peeled and cubed)
2 cups of white sugar (if apples are very sweet, use only 1 1/2 cups of sugar)
3/4 cup of vegetable oil
2 eggs at room temperature (beaten)
2 cups of all purpose flour
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 teaspoon of baking soda
1 teaspoon of salt
1 cup of walnuts (chopped)
Preparation:
Preheat oven at 350° F / 176° C
In a large bowl add the sugar. Peel the apples and cut them into medium size cubes, add to the bowl and mix together with the sugar, set aside.
Measure and sift together the flour, cinnamon, nutmeg, baking soda and salt.
Add apples and sugar to the dry ingredients and mix well.
Then add the vegetable oil, beaten eggs, and nuts and mix everything together.
Pour into a greased and floured cake pan and bake for 40-45 minutes.
Enjoy as a dessert or with a fresh cup of coffee for breakfast!
