These rolls are so fresh, healthy and a change from the usual fried spring rolls. You can play with the ingredients, I like mine only with vegetables, but you can add shrimp if you like it.
Do not be scared, the first time you make them it might be intimidating. It takes practice but you will master the art of rolling pretty quickly.
Ingredients:
Rice Paper
Vermicelli Rice Noodles
Avocado
Carrot
Cucumber
Green Onion
Lettuce
Cilantro
Mint
Sesame seeds
Preparation:
Start by placing the rice paper in warm water for about 5 seconds. Remove the paper from the water once it is hydrated and soft.
Place the paper flat in a chopping board, and start adding your ingredients in the middle. Start with the lettuce, top with the cooked noodles, carrots, cucumber, green onion, avocado, cilantro and mint.
Gently pull the bottom side of the rice paper on top of your pile of ingredients. Roll the left and right sides and then roll upward to tightly finish closing the wrap.
