Garlic and Rosemary Potatoes

I am a huge fan of potatoes! When making this recipe the smell of the garlic and the aromatic rosemary makes these potatoes nothing else but amazing. This flavor combination is perfect and you can adjust the amount of garlic to suit your personal taste, although I am of the opinion that the more the better!!


Ingredients:


10 small potatoes

2 large cloves of garlic (minced)

1/4 cup of olive oil

1-2 sprigs of fresh rosemary (finely chopped)

Sea salt


Preparation:


Peel the potatoes and cut them into cubes. Place in a large pot with water and bring to a boil, then simmer for about 6-10 minutes or until soft.


Drain the potatoes and set aside.


Heat the olive oil in a small pot. Once the oil is hot, add the rosemary and the minced garlic. Cook until the garlic is golden brown.


Add the olive oil mix to the potatoes and toss carefully.


Season with sea salt and serve.
