Bread and Butter Pudding

Bread and butter pudding is a classic comfort dish traditional from the British cuisine. This is one of those recipes that can put a smile on everyone´s face.


This dessert brings me sweet and cozy memories of my father, as this was his favorite and would always request it for his birthday. There are many variations of this traditional pudding, the recipe I share with you was was brought to my family from an old friend from London that was a fantastic baker.


The combination of cinnamon, nutmeg, butter and sugar will have your kitchen smelling like a bakery.


Servings: 6 - 8

Ingredients:

18 slices of bread

1 cup of sultanas/raisins (or more)

Cinnamon

Sugar

Unsalted butter

4 cups of milk

4 eggs

1/2 teaspoon of nutmeg

1 teaspoon vanilla extract

Preparation:

Preheat oven to 180°C/350°F. Grease a 35 X 22 cm baking tray.


In a large bowl add the eggs, milk, nutmeg and vanilla extract. Mix well using a whisk or fork. Set aside.

Generously spread one side of each bread slice with butter.

In the baking tray arrange a layer of the bread slices with butter side up. Sprinkle with sugar, cinnamon, and raisins. Repeat with second layer of bread slices. Add the third layer of bread slices and only sprinkle with cinnamon and sugar.


Pour the milk mixture over the bread. Set aside for about 15 minutes for the bread to absorb all the liquid.


Bake in the oven for about 35-45 minutes or until the top is golden brown.


Note: You can accompany the bread and butter pudding with a scoop of vanilla ice-cream.
